This salad is a fresh, sweet, tangy salad that is satisfying and goes well with many different meals. Since I first made it a few weeks ago, I have been having it on a regular basis! It is easy to keep the ingredients on hand and throw together. If I need a heartier version for lunch, I cut up some roasted turkey lunch meat and add that to it. It’s great!
Feta, Pine Nut, and Craisin Salad

spring mix salad
feta (I used fat-free)
grape tomatoes, halved
1/2 c. canola or olive oil
1 Tbsp. red wine vinegar
3 Tbsp. white wine vinegar
2-3 tsp. minced garlic
1 tsp. sugar
salt/pepper to taste (the more pepper the better, in my mind)
Combine salad dressing ingredients in a container, seal, and shake well. Refrigerate. Mix dressing at least one hour before serving to allow flavors to combine.
Heat a dry pan. Add pine nuts and cook until they are lightly toasted on each side. Remove from heat and allow to cool.
In a large bowl, toss all salad ingredients to combine and serve. (I added dressing to each salad individually rather than to the entire bowl so that it was based on each person’s dressing preferences.)
